Everything started in 2010 with a university project on the conservation of Rosalia alpina in the Italian Alps. Later, I delved deeper into the taxonomy and phylogeny of the remarkable Trechini beetles. Along the way came a chapter dedicated to food and wine — and the first spark of an idea: perhaps insects, food, and sustainability were more closely connected than they seemed.
The journey into entomofarming truly started in 2018: insects for food, feed for pets, and, not to be forgotten, frass. Since then, I have worked on certifications, research, production, market development, process optimization, as well as the design and implementation of supply chain models.
Today, I am here to share this experience with colleagues and friends, while reminding myself every day of what one of my professors once said during those early university courses:
“Why is biodiversity important? Because it’s beautiful.”
